We asked for YOUR mac and cheese recipes back in America’s Favorite Side Dish. Reader Joel B. answered the call! Thanks, Joel!

Here’s his recipe. It has two unique ingredients: mustard and potato chips!


Joel’s Baked Macaroni and Cheese

Ingredients:

2 tablespoons butter 

2 tablespoons flour 

1 teaspoon salt 

1 teaspoon mustard 

2 cups milk (Joel’s family usually uses 2%) 

3 cups shell pasta or 2 cups elbow pasta

2 cups shredded cheddar cheese (medium or sharp) 

1/2 cup (or more) potato chips, crushed

 

Directions:

Preheat oven to 375 degrees.

Start water boiling for pasta. Cook pasta per package directions.

Meanwhile, in a saucepan, melt butter over medium heat. Remove from heat. Blend in flour, salt, and mustard. Slowly add the milk to the butter mixture, whisking along the way to reduce clumping. 

Once all the milk is added, heat over medium-high heat, stirring occasionally until mixture thickens a bit. And 1 1/2 cups of cheese and turn off heat. (Cheese will melt in mixture.)

Pour half of cooked pasta in 2 1/2 quart casserole dish. Top with half the cheese mixture. Pour remainder of pasta over cheese mix and top with remainder of cheese mixture. Mix as needed to ensure pasta is coated. 

Pour remaining 1/2 cup of cheese on top of casserole. Top with the crushed potato chips. Bake at 375 degrees for 20-25 minutes, until bubbly and beginning to brown.
